Chicken Sandwich Wars!January 10, 2020
Move over Chick-Fil-A—and move over Wendy’s! We’ve got some new chicken sandwiches sweeping the nation. That’s right; in the fall, the Blue Harbor Senior Living communities teamed together to compete for who could make the BEST chicken sandwich around.
In this edition of the True Blue blog, let’s take a look at all the incredible efforts to celebrate this great competition. One of our communities – Sunshine Villa Senior Living - even got a shout out in the Santa Cruz Sentinel.
This was such a fun competition! The chefs got to come up with really unique chicken sandwich recipes and the residents were able to be the judges. From Buttermilk Chicken sandwiches to Chicken Wraps to Chicken Club Sandwiches, we got to see so many unique takes on this favorite food. Just take a look at all these incredible varieties from our lovely community Arbour Square at West Chester.
So Much Fun!
All of the competitions across the communities were so much fun, and each one had their own unique flavor. Take a look at this snap from our Chateau Brickyard Chicken Wars; they even had a “real” chicken!

The Winning Recipe!
So many communities had an incredible variety of sandwiches to choose from and vote on. One of our communities in Eugene, OR, Sheldon Park Senior Living, was kind enough to share the recipe for their winning sandwich for all to enjoy! Sheldon Park Grilled Chicken & Cheese Sandwich
Servings: 2 Sandwiches
7 oz canned chicken
4 slices thick cut bacon
4 slices thick seedy bread (Dave’s Killer 9 Grain is our usual go-to)
1 ripe avocado
3 tbsp full fat mayo
1-2 tsp honey or dijon mustard
1/4 cup diced onion (red gives it a bit more tang but white or green works just as well)
4 tbsp cream cheese (divided)
4 oz medium cheddar cheese, shredded for easier melting
Salt & pepper to taste
2 tbsp unsalted butter
Diced jalapeños (1-2 tbsp, fresh)
While bacon is cooking, dice onions and drain canned chicken. Using a fork, break the chicken up in a medium bowl and then begin adding in mayo, mustard, onions, salt and pepper and any additional add-ins. Mix until consistency is like chicken salad; if it seems a bit dry, add more mayo 1/2 tbsp at a time.
Once chicken is mixed and bacon is done cooking, prep your bread! On one slice, smear on 1-2 tbsp cream cheese and on the other, mash half of avocado. Add half of the chicken mix, 2 slices of bacon, and your choice of cheese(s).
Heat a medium/large pan (one that can hold two sandwiches as they grill) on medium-low heat. If using butter, place 1 tbsp in pan and swirl it around so that it covers the whole surface before adding sandwiches (butter should be just starting to lightly bubble on medium-low and try to avoid scorching by running it too high; alternately you can use the bacon grease to grill the sandwiches).
Add sandwiches to pan and cover, letting cook untouched about 5 minutes before checking doneness of first side, making sure it is grilled to your preference before flipping and cooking covered for another 5-8 minutes or until grilled to preference and all cheese is melted.
Enjoy with a big bowl of soup! Yummy!
